Looking for a great dish to have on hand for weekday lunches? Needing something a little different to serve at a luncheon? This quick, easy, and inexpensive recipe is just what you need. This was something my mama made all the time when I was growing up. I love to eat mine with a side of saltine crackers.
Ingredients:
1/2 Pound Bow Tie Pasta
3 Hardboiled Eggs, Chopped
1 Cup Thinly Sliced Carrots
1- 15 ounce Can Sweet Peas, Drained
2 Tablespoons Sweet Pickle Relish
2- 5 ounce Cans White Tuna in Water, Drained
1/2 Cup Mayonnaise
1/2 teaspoon Black Pepper
1. Bring a large pot of water to a boil. Place the pasta in the boiling water and allow to cook for 12 minutes, or until tender. Drain.
2. While the pasta cooks, prepare the remaining ingredients and place in a large bowl.
3. Pour the hot pasta into the bowl and stir until thoroughly combined.
4. Cover and refrigerate until ready to serve.
