Superfood Scramble

This is the perfect time of year to enjoy fresh produce and farm fresh eggs for a beautiful, colorful meal. Although most people only think of eggs for breakfast, this meal is great for any quick meal, any time of the day. One of the best things about this recipe, besides the taste, is the big bang-for-your-buck in terms of health benefits.
The Superfood Scramble combines the health benefits of not one, not two, not even three, but FOUR known superfoods in one easy meal. Just look at some of the health benefits of the ingredients:

Avocado: Promotes Heart Health, Anti-Inflammatory, Regulates Blood Sugar, Antioxidants
Onion: Promotes Heart Health, Supports Bone Density, Anti-Inflammatory, Anti-Cancer
Spinach: Anti-Inflammatory, Anti-Cancer, Antioxidants, Supports Bone Health
Tomato: Antioxidants, Promotes Heart Health, Supports Bone Health, Anti-Cancer

Don't let the simplicity of the dish fool you. There is more flavor in the small dish than in some of the most elaborate recipes you can find.
1/2 Tablespoon Butter
1/4 Small Yellow Onion, Thinly Sliced
5 Grape Tomatoes, Halved
1 Egg
2 Egg Whites
1/2 Cup Baby Spinach
1 Tablespoon Shredded Cheddar Cheese
1 pinch Salt
1 pinch Black Pepper
1/2 Ripe Avocado, Sliced

1. In a small skillet, over medium-low heat, melt 1/2 Tablespoon butter. Add the onion and tomatoes. Cook for 2 minutes, until tender.
2. In a bowl, whisk together the egg and egg whites. Pour over the onions and tomatoes. Using a spatula, carefully begin stirring the eggs. Add the spinach.
3. Cook the eggs and vegetables over medium-low heat for 3-4 minutes, stirring frequently to provide a light and fluffy scramble. If the egg is setting too quickly, reduce the heat.
4. When the scramble is almost completely set, sprinkle with cheese, salt and pepper (to taste). Continue to gently stir.
5. Lay the sliced avocado on a plate and then top with the warm scramble.
6. Serve and enjoy immediately.

So it is well known that I make  Black Bean Burgers  all the time. I love the versatility of the recipe and the ability to make a week of lunches in about 15 minutes. Today, I found myself with a bowl of leftover black-eyed peas in the fridge and the desire for something new. This recipe is also great because I always have canned black-eyed peas in the pantry since they are one of my husband's favorite vegetables, which means I can make this recipe anytime. So whether you use leftover homemade, like I did, or canned, this recipe is great. Additionally, these are not coated and fried like traditional croquettes, which makes them an even better option. Banana Zucchini Bread with Raisins and Cinnamon Sugar Swirl

It is that time of year again when I am working to develop new and interesting ways to use up all of the vegetables coming from the garden. Last year, I posted "The Best Zucchini Bread"  recipe; this is still a great recipe but this one is even better! Since entering my last trimester of pregnancy, I am craving cinnamon raisin bread. This recipe was created to help merge the two flavors while also adding in some nutrients from bananas, as I always seems to have 2 or 3 that get left over and become a little too ripe. This bread is so fragrant, moist, and delicious! If I had some walnuts in the freezer, I might even finely chop some and incorporate them into the swirl for even more texture.
