I love sweet potatoes! However, I love the natural flavor and sweetness without all of the extra sugar. I am not saying that I do not appreciate a wonderfully gooey potato covered in cinnamon and brown sugar, but, when it comes to my wedges, I like them in their simplest form. This recipe only has 4 ingredients and is a great way to get your kids to eat their veggies because they are sweet, slightly salty, and baked!
Ingredients:
4 Large Sweet Potatoes
2 Tablespoons Vegetable Oil
1 teaspoon Sea Salt
1/2 teaspoon Cracked Black Pepper
1. Preheat oven to 450 degrees.
2. Using a vegetable peeler, remove the skin from the potatoes. Cut each potato in half, lengthwise, and then cut into wedges. You should get 8 wedges per potato.
3. Place the wedges on a baking sheet. Drizzle with oil and then sprinkle with salt and pepper.
4. Bake for 17-20 minutes, turning once halfway through cooking.
5. Serve immediately!
